Davy Dosnon runs this small, artisan cellar in Avirey-Lingey. Dosnon pursues sustainable viticulture and makes his wines in a fairly non-manipulated style. All of the wines are fermented and aged in oak (although they rarely show overt influence from the wood) and are bottled with low dosage. The estate is situated in Southern Champagne, with Chablis-like soils.
From Sustainably farmed 25-year vines on Kimmeridgian limestone soil. Récolte Noire Brut Nature is a Blanc de Noirs made entirely from Pinot Noir with a minimum of two years aging in the bottle and bottled brut nature. While most growers would put a Blanc de Noirs at the end of a tasting, Davy puts it near the start as Pinot on Kimmeridgian soils is delicate, filigreed and mineral. Fascinating to taste side by side with the regular Récolte Noire bottling which has a dosage of 5g/L, the Brut Nature shows a more forceful and intense expression of Côte des Bar Pinot.
